CAPRIAL WITH A TWIST

So all of a sudden Sherry and Margot are involved in a new version of the biathlon: redesigning the house, and cooking. Sort of a “Great Chef meets HGTV” reality show. Room after room gets changed and fixed, to look exquisite. And then all of that effort is followed by an incredible dinner. Sherry takes a twist on Caprial, with guidance form Hillary, to raise a meal to an art form. Margot absolutely agrees!!!

PANFRIED SWORDFISH STEAKS WITH CUMIN AND AVOCADO CREMA

Avocado Crema:

2 avocado, ripe, pureed

1\2 cup plain non-fat yogurt

1 Tbsp. lime juice

1 Tbsp. Emeril Essence

Mix together well until well mixed.

1.5 lbs swordfish

Puree:

3 cloves garlic, crushed

2 tsp. minced ginger

2 tsp. ground cumin

1 tsp. curry powder

1 tsp. chile powder

Place all ingredients in a small bowl and mix well. Rub both sides of the swordfish steaks with the spice mixture. Let sit for 30 minutes.

In a large pan, heat oil until smoking hot. Place steaks in the pan and, turning regularly, until the swordfish is just cooked through.

Remove from pan and serve with Avocado Crema.

Accompanied by Mediterranean Spiced Couscous.
