It was a hot early summer day. We spent the day acquiring a new gas grill and some patio furniture. The guys at Lowe’s were very helpful. They assembled the grill for us, and arranged for us to get a truck from them to deliver all the stuff. Of course, when it took three guys to lift the grill into the truck bed, Sherry said: How am I going to get it out? The lead guy said: “I don’t know, ma’am”.
Sherry managed to help get the 70 lb grill out of the truck without incident!!
Eric assembled the furniture and I said: “Why not grill and eat outside (mosquitoes permitting)? So we decided to cook tiny lamb chops on the grill, with a side of couscous with sun-dried tomatoes, and a Greek Salad with Grilled Wheat Bread.
Greek Grilled Bread Salad with Cucumbers
Cherry Tomatoes, halved
Chopped red and yellow peppers into small dice
Cucumber, peeled and seeded, chopped into small cubes
Whole wheat baguette, cut into cubes and grilled in a skillet until browned
Crumbled reduced-fat feta cheese
Chopped fresh basil
Lemon juice
Red wine vinegar
Olive oil
Mix all together and serve.
